THAI STYLE CHICKEN KEBOBS

~1 1/4 lbs chicken tenders or breasts cut length wise
(I do the Breasts)
~8-10 wooden skewers soaked in water
~1/4 of teaspoon ginger
~1 clove Garlic minced
~1 red chili pepper( cut length wise de-vein & discard seeds, then dice fine. keep seeds and add if you like it spicy.)
~Juice of 1 lime
~2T.honey
~3-4 T. sherry
~salt(to taste)
~juice of one lime
~ 2T.Crunchy peanut butter
~8oz coconut milk(canned)
~1tsp. curry powder
1.skewer chicken
2. in a 13x9 mix, ginger,garlic,chili pepper,lime honey,sherry,salt,
add skewers & marinate at least 1 hour.
3.grill, broil or fry your skewers--remember keep them turning as not to burn.
4.Peanut Sauce- in a sauce pan whisk coconut milk and peanut butter and remaining marinade ( no you won't die from salmonellae just make sure it comes to a low simmer.)
I serve this with rice and guess what my kids eat it because it tastes like sweet peanut butter the MOTHER of all little kid foods.
